Quick question, I'm a registered operator of my Mini 2 in the UK and I'm travelling to Italy soon, do I need to go through a separate registration process there?

Yes you should. Since Brexit the rules have changed in the UK compared to Europe. In theory you can register in any European country, I did mine in France on Alfatango as they also supported English on their site.
