When I had my P3A I could access the flight logs on my iPad and then view them in CSV View to see all the drone flight parameters.

Is this possible with the Mini2/Fly app?

I've found the Flight Records, and a whole load of other folders, but none of them will open.

You can NOT process the Mini 2 .txt flight log, nor the DAT, with CsvView, both logs are encrypted.   
BUT
You can process the Mini 2 .txt flight log with

and CsvView WILL process the csv downloaded from there.

I do not remember if CsvView can process the csv from Airdata but the latter is missing a lot of information when compared to the PH csv so I never bother with the Airdata csv.

I've used Airdata for a few years and am very happy with the results.

Success!! Took a bit of research but finally managed to upload and look at my flight logs.

If you are looking for just a replay of the flight ..... do you know that the app can do that with, I think, basic telemetry included?

I've got what I want guys, as above.

From there I can download the CSV file and plot the parameters I want.
