Just curious why, or how, the RC remote does not have a clock?

I like the aspect that the RC remote has a flight log that logs flying time, but it seems useless if it doesn’t have a start/end time.

If you meant that the flights must have a start/end time, regretfully, the DJI RC/DJI Fly does not have that function but we will take it as a suggestion of yours and will forward it to our relevant team. If you sync your logs to a free airdata.com account you can see the start and end time of flights.  

The RC controller certainly has a clock.  You can see it easily.

I'd be somewhat surprised if a replay of the flight log in the app does not show the date and time stamp of the start of the flight in the actual replay itself. The log's name itself contains the date and time stamp of the start of the log though only the date is shown in the actual list of flights displayed in the app's flight record section.
In addition if the log is uploaded to https://www.phantomhelp.com/logviewer/upload/ and the csv is downloaded, the 'live' date and time stamps for each line of that csv are shown in columns A & B, with the time stamp shown in the 12hr clock down to two dp of the seconds.
