In the flight log of my Mini 2 SE, I saw the error GPS Position Mismatch while there are 16 satellites are available.
Is this an evidence for GPS spoofing ? or they are just jamming frequencies used by GPS with noise ?

As things stand at the moment you are, in effect, posting a photo of a piece of string against a featureless background and asking ''How long is the string?''.

If you wish to know was "GPS Position Mismatch." means, then why not try a google for "DJI GPS Position Mismatch"?

It's not.
I sometimes see it here in my part of the world, where there is no GPS interference.
It's a common, meaningless false alarm.
If you want to find out whether there was a real problem, you need to post your flight data.
The data would show if there are odd variations in GPS Health that are an obvious indication of GPS interference.
