There was one Boucher Chevalline in our area. Came to the market at St.Hilaire du Harcouet once a week.
About 40 minutes away in the car, but worth the trip.

But even the supermarkets have sections for it,     could be quite easy to buy the wrong meat by mistake.

In the last couple of years we were there, a guy in the next village bred Percheron foals for meat.
Butchered at 1 year old, the meat sold as Poulain.  Nice, but lacked the depth of flavour of older animals.

It's controversial. The newborn calves are kept in crates and fed nothing but milk until they're slaughtered for meat.  You can see them lined up, the smaller green and white crates, bottom left of this screengrab.

I think the practice is gradually being phased out. But it was the norm in France. Male calves only, of course.   Steady rain again here this morning.  We're off to our French group shortly.
