No mystery here Kervan is a bunch of camels/horses lined together to carry trade goods and Saray is a barn in this case rest stop/hotel I am not 100% sure but it's Turkish or from Arabic descent - so in all the ancient trade roads there was some

Yes these are Turkish restaurants, which matches that description.
