I was thinking of purchasing an Osmo Pocket 3.
I need to position it suspended upside down with a rod fixed to the ceiling.
Is it possible to record with the camera rotated 180° and have the display rotate as well?

Sorry, but I'm not very experienced... I don't know what an OSD is. Could someone be so kind as to post a picture or video of how the display looks upside down, please? Thanks again to anyone who can help me.

Attach it at an angle, you could use a little ball head. Also, you can control it with your phone, why bother using on bored controls?

Some call it 'sling shot' (upside down). It's very cool to do with a gimbal.
But can also be done from a tripod of course.
