As best I can tell they are all playing back at 100% speed, you can tell from the wisps of smoke, the speed pedestrians are walking/birds are flying, rubbish is falling off conveyers etc. It looks exaggerated because you are flying fast, close to the ground and making sudden stabs to turn the camera/aircraft. The secret is very slight, smooth movements to the controls, not pushing the stick all the way then releasing it and suddenly repeating it again and again. The longer stick trick helps giving gentler input to the controls. Pans and tilts of the camera should be as smooth as you can make it. There are a couple of shots there that turned out perfectly, I could be convinced that you went to intelligent flight mode and did a point-of-interest orbit e.g. at 1:07. Slightly more altitude and a slight down-tilt of the camera can disguise some of those moves too. If you get a bit more advanced, you can also alter the gain settings of the remote within the GO app, so that the curves aren't so abrupt and they will slow your aircraft's response to yaw inputs and make the turns less sudden.
