I'm planning to visit some mountains this summer (in Europe) and came to one "problem" regarding the maximum height of 500 m imposed by DJI.

Scenario : I'm standing on the mountain ridge, and there is a vertical drop of more than 500 m over which I would like to fly. The problem is - once the aircraft is over the drop, the distance to the ground is going to be > 500 m.

If I'll fly around, loose some alititude to film the rocks etc, will I be able to bring back the aircraft because the height over the ground to which the aircraft will have to fly is > 500 m ?

Thanks for the update, but did you try this? Playing with the Litchy  Mission Hub - it is obvious this does not work, at least in the simulation.

If I fly off the peak and add 500 m (max altitude over the ground), the aircraft is still -76 m compared to starting position ?!

It is not a problem to fly on a mountain no matter how high it is until the surrounding terrain is not much lower.

What I ask is when you go over the edge of a vertical drop which is > 500 m...

Is doesn't matter if you go over a cliff.  Its the height from take-off.  So if you fly over the edge of a cliff and drop down <50m then for example you hit the RTH it  will rise to the height set and will rise to that height before coming home.  So if RTH is set at 30m and you fly over a cliff and down 20m it will rise 40m up to the 20m height set at take- off.
