I have ordered a Phantom 2 Vision Plus v.3 but would rather "get to know" and hone my piloting skills before chancing a crash and subsequently damaging the gimbal and camera. Is it possible to remove the camera assembly?

Yes, there videos out there if you want a visual

Yes you can remove the V+ camera, but in doing so you also lose the advantages of the Vision app as it will not work without the camera attached.
The Phantom is very easy to fly, just follow the instructions and the training guides, take things slow and all will be fine.
