We're having bad video quality issues on our inspire 1, and I noticed there's stickers over the antennas. Should we peel them off?

I would think so, I don't have any on either the Inspire 1 or Pro version

Post a photo of the stickers you are talking about?  I have clean antennas no plastic or stickers covering them on any of the DJI aircraft remotes.

If you are having trouble this would be the first thing to do, then make sure you have them pointing parallel to each other (never pointing at the aircraft)

I'm also not sure what stickers are you talking about.  The most important is your antennas position.  Please check this video:  

No , they are just advising not to put Stickers or to cover that spot with anything.  Read what the Sticker says.
You are talking on the aircraft correct?   If there are any wrappers or stickers on the Radio Control  Transmitter remove them .
