On the app it says set your maximum flight distance between 15-500 meters. How do you go beyond 500m? I see people can go way further than that

You can select a number if you want a max distance.
Or you can also switch off the maximum distance option

Yeah there is a switch just above the maximum distance area where you enter the distance. Switch that off and it will disable a maximum distance.

2 km . thats the max range of my phantom 3 standard  .  

I've gone over 6kM with my P3P.

Your maximum flight distance depends on the environment yo'r flying in . The less interference the longer your range
