I'm wishing to fly low and close over some water here and San Diego Mission Bay does anybody recommend using tape over the sensors or what might happen if I do thank you in advance

Very risky manouvre. Even with everything working properly, that is a good way to lose your aircraft. The height is maintained by either VPS or the barometer. Disable the VPS and all you have is the barometer, which in itself can vary by a metre or so. Good luck with that.
