The version on the DJI site appears to be missing most of the text/data (certainly by comparison to the Spanish version).
The videos are great (often specific to the advanced/pro with different controller and s/ware) but not very portable. I have notified DJI.
Any thoughts?

Both manuals appear to have an expected amount of text to me.
Have you tried to view the document on more than device, and or with more than one viewer software?
The pages do load a bit slowly using Adobe reader on android, but they do eventually show text and images.

You can view the PDF manual of any of the P3 Aircraft, Inspire, orM series  in the Academy section of that now. of the GO app. From the homepage choose the aircraft that you want then the upper right icon (graduation hat) tap that and it will take you to the manual of the aircraft you have chosen.
