I searched but nothing came up.
I have 2 P3As and they both say same thing in the "About" section.
I have the latest firmware on one and the other needs updating
App version says 2.5.1
Remote version says N/A
Aircraft version says N/A
How do I tell what version I have?

No you have both the RC and AC powered up ? Might be a silly question, but you didn't say in your post.

Just did an update on a new battery and says everything up to date but still nothing in the version  for RC or AC
I know it used to show the versions so I'm wondering if it's some kind of setting I may have changed

Just to be sure, is 2.5.1 your actual Go app version or do you have the latest Go app? Can you verify what firmware you were updating to? What mobile device do you have?

Yes, go app is 2.5.1.
I updated to firmware 1.9.60
It happens on both my RCA tablet and LG phone

I also had N/A in About for both the Remote Controller and the Aircraft until I updated the firmware

Since you're using an older version of the Go app, the app may not be able to display current firmware versions correctly. Try updating to version 3.0 and let us know if the issue persists.

This version is buggy. Look what else I found from a DJI rep posting, talking about a different issue.

I also have a P3 standard and it's the same issue

The same situation for P3A, but not hopeless.  Today I tested my P3a with various android appliances along with DJI Go app: 3.0.1
Here are my tests:
Samsung S3, android 4.3: N/A
Samsung Note 3 neo android 5.1: N/A
Lenovo Tab2 A10 android 5.1: N/A
FinallySamsung Note 4 , android 6, versions of RC and drone are visible: RC 1.8.0 , Version: 1.9.60

As far as I can see this problem, "About" function is quite Android version dependent.
With Samsung Note 4, even I managed to update the RC firmware from 1.6.0 to 1.8.0, as well.
Android is rather diverse system and dji seems not to care with aging android enough.
