Is it possible to change camera settings, like shutter speed, aperture and iso from the remote on the S1000?  If so, what configuration would be needed?

The S1000 is a platform and not a camera, so the answer would be both yes and no, depending on what else you put on, for example, if you put on DJI's A2 and Zenmuse Z15 for the BMPCC, you can controll aperture and shutter, but if you put on the A3 and Ronin-MX you can only trigger shutter.

Thank you for the reply.  Does the A2 and Z15 also allow you to focus with AF lenses?

No, only Start/Stop record, Shutter and Aperture, if the camera has LANC controll, so with the Sony you can only do shutter for example.
