I just got Mavic today and I hooked up all 3 batteries to the charging hub but only one battery has a light on as if to be charging.

Does this thing charge one battery at a time or all 3 at once?

What am i doing wrong? Any suggestions?

The charging hub that came with your combo charges one battery at a time.

Anbee should be coming out with a multi-battery rapid balance charger for the Mavic soon. It'll essentially allow you to charge all three batteries at the same time, including the remote, saves a ton of time. DJI don't recommend using it, but it works absolutely fine as I used one with the Phantom 4 for around a month, worked beautifully. And it switches itself off once it's done charging all of the devices too. Built-in powerful fan prevents any overheating issues.

It starts charging the battery with the most charge first... Then goes down the line.  The Advanced Charging hub, which will come out later, will be able to charge multiple batteries at once using the 100W charger from the P4.

will DJI have a "trade in" trade up offering later? Cause this is not what one expected.?

No they won't have a trade up program.
What led you to to believe the included charging hub preforms as the Advanced hub?

wait 2 weeks and you can see a ton of charging hub on ebay who allow you to charge your 3 or 4 battery in the same time
it's not really difficult to make one by yourself
i made it for my P2 / P3 lol
