I was told that the gimbal can only be moved up and down and I haven't found a way to rotate it or anything but when it boots up it seems the camera rotates 90 degrees and spins.  Can it only be controlled up and down?

It is a 3 axis gimbal but yes it can only be controlled in the up and down direction (also horizon is adjustable). You change the left/right orientation of the gimbal by changing the yaw of the aircraft.

Yes it is a 3 axis gimbal but you only have total control of the tilt axis.
There are some adjustments to the pan and roll but you cannot freely control them to move them on whatever shot you want to frame.It has to be a 3 axis gimbal to give you stable level footage when flying.
