I could swear that I saw where the cruising speed could be seen and adjusted,  but now i cannot seem to find it. I've scoured the settings in both Litchi and DjiGo while connected to the aircraft. Anybody know where to find it?

I found it! It's in the mission settings in the litchi app...which is new as of today. Hopefully no bugs!
