please can anyone tell me what tablet with 3g/4g thay are using that it not too expensive that is still avaliable new to buy, or the required ram and quad speed.

Either will work but as you seem to already know, you'll need an internet connection for dynamic loading of map data. Alternatively, you can cache the map data you need before the flight and fly without an internet connection. Personally I give my (wifi-only) iPad Mini 4 internet access using the mobile hotspot feature of my cell phone, and I believe a lot of other folks do the same.

The only thing you lose with the wifi-only version (or gain with the cellular / GPS-enabled version) is the ability to use Follow Me and to dynamically change your home point during flight.
