When taking video, how can I keep detail in the sky whilst balanced against the subject of interest

If you're talking about the sky being over exposed a couple of things you can try. An ND filter can help but you may loose some shadow on the ground. Shoot in a log mode which tries to give you a bit more dynamic range, avoid shooting into the sun.

You can take photos in HDR mode at different exposures, with a bit of fiddling you can paste the sky photo back into your video and get some decent results.

Avoid auto settings, you'll want to be adjusting your settings, filters etc for every shot you do, they'll all be different. No more just flying around taking video
