If i launch my drone from a 500 ft mountain and i set my RTH to 100 ft, will the bird return by flying down to 100 ft and hit the mountain on the way back or will it fly up to 600 ft and back ?  Does the gps knows the vertical distance relative to the take off point in my case ?

It will raise to 600 ft and fly home. Your height is from take off if you fly over a ravine your height will be a minus, your Rth height will always be measured by take off point.

The 100 feet is from your take off point - which is recorded as 0.
If you fly out and down below your take off point, your recorded altitude will be minus values.

Keep that thought. And BTW, the GPS does not measure altitude in a DJI aircraft, it is far too innacurate. Altitude is measured by a barometer in the aircraft.
