So if I but a product such as the Osmo Pro system on eBay or some other source from another owner and there is still some product warranty time to the product, does that warranty transfer to me with the product or does it stay with the original owner and I have no coverage?

The components that are activated via the GO app, like the gimbal handle, could have the warranty activation traced without a receipt. If you get a unit off hand, though, it would be recommended to at least get the original proof of purchase from the first owner to keep track of all the accessories etc. that can't be tracked via activation date.
