I was able to rollback the old firmware V1.6, but now the option to update it back is not there. Originally my firmware was 1.9.3 (I believe) and after rolling it back, that option doesn't exist on the drop down. I can update firmware between versions 1.5.80 and 1.6.0, but 1.8 says complete but after reboot it appears that it wasn't ever updated.
On another note. Before powering up the remote, I press the power button once. The first to white LEDs are solid and the third one blinks. Does this indicate the battery charge level?

That's correct, each solid light represents 25%, and flashing is 12.5 %, so reading that it suggests your charge is somewhere between 62.5 & 75 %.
It is also correct in that it does not display the V1.9.3 update in the roll down menu.
To update to V1.9.3 again , try the following:-
With RC and display connected (aircraft off), and display has a good wifi connection to internet. Run DJI Go 4 V4.1.20 and 'enter device'. Open the 'aircraft status' screen by tapping the screen at top edge where it says 'disconnected'. The top line 'Overall Status' should show if update required (this may take a minute or two to appear). when it does then tap on that and it should take you through the process to update RC.
Edit:- just as a thought, in the aircraft status list it also displays the RC charge if I remember correctly.
