I've search through the menu system of my new Mavic Air (had the Mavic Pro previously), and I do not see an option for taking photos in portrait orientation.

Just wanted to be sure that I am not missing it. Is it there? If not, could we see it in future firmware update?

No way you will see it in the future, as the gymbal would need to rotate 90 degrees ... and that is impossible with the gymbal of the Mavic Air

Vertical Pano is an option. Picture can then be cropped if required.

I don't think the OP was talking about the vertical pano. I think he was referring to the portrait mode that is available on The Mavic Pro & Platinium. On these, the gymbal can rotate 90 degrees, and offer a real portrait mode.

I had understood that, just thought the pano could be a workaround.

It can for sure - vertical panos take 3 stills in a portrait format - though portrait stills are not as yet an option on the MA.
