Does the Mavic Air stop if the prop hits something?

Not necessarily.   It's quite good at recovering.

If it does hit anything, make sure you replace the damaged prop. It will judder and shake just like any DJI drone. Have to be pretty serious to make it stop mid air. Branches tend to just either capture the drone or send it down side ways. Walls - you better have either cover or money for repairs.

At 1:31 this guy bangs his MA into the underside of a bridge 3 TIMES and it amazingly recovers each time.  He goes on to say that there was no physical/functional damage whatsoever.

Pretty amazing.

  

Nope, pretty great reactive measures to hitting say a tree, which I have done with it.

DJI should contact the guy and get permission to use that video show how tough a bird Mavic Air is.

That would be making a claim that they couldn't back up.  It survived what you saw, but who knows whether it would do it next time?  Way too risky for them.

It depends, on some occasions, if the drone hits something causing the certain angel tilted, the propellers might stop.
If you want to know the way to stop the propellers when it hits something, please refer to the manual below.
