when I bought my Mavic pro I notice that there was a tab/film cover on top of the gimbal and I'm not sure I'm I'm supposed to remove it

Yes, it's okay to remove it (just like you probably removed the other stickers from your drone, remote controller, and accessories). Make sure you hold the camera firmly when removing the sticker. It's not as easy to remove as most of the other stickers.
