I'm off to France in a couple of weeks time and of course I'm taking my P3A, but doing a shearch on the French regulations I'm getting conflicting messages reguarding Liability Insurance, some state I need It some state I don't. Any ideas?, I don't mind getting cover if I need to. Thanks

Are you aware of dronerules.eu there are links to the official rules of many countries under the headline Regulations.
I would say you better sign up for insurance, better safe than sorry no matter where you fly.

Here or there? We don't  register in the UK yet, surely you don't need to register in France whilst on holiday? Or do you?

According to dronerules.eu for France no registration is needed.
It might be worth reading the local rules to see what specific is meant by the last point in the following bullets.

If:
The purpose of your flight is limited to leisure and does not involve any commercial activity. In addition, your flight must take place outdoors.

You must:
    Follow National Safety Leaflet (here) and the detailed guidelines (here)
    Always keep visual contact with the drone
    Have insurance that covers recreation drone flight
    Respect the maximum flight altitude (150 m)
    Request authorisation for drones over 25 kg
    Fly outdoors

You must not:
    Fly over people
    Fly at night
    Fly near airports and other sensitive areas
    Broadcast aerial pictures without the consent of the concerned persons
