I think I'm on the latest, DJI go 4 app  4.2.22 and mobile iPhone 5s iOS 11.4

Try a higher FPS

Hard to see from your video where the lag is.  However you are moving the yaw stick and there is a delay before you see the yaw on the screen.  This happens because the gimbal is applying reverse yaw to counter act your input.  When the gimbal reaches the end of its travel the image actually starts to yaw.
