So far as I can tell, DJI Media Maker will make just 180° panoramas or timelapses.
I like to shoot "WIDE" panos, to create 16x9 images.  DJI Media Maker will stitches the 9 images well enough, but stretches the final image to a 180 degree perspective.  No bueno.
Any workaround to this weirdness?

I wasn't clear.  DJI Media Maker will only make timelapses, 180 degree panoramas or 360 degree panoramas.

I prefer to shoot "Horizontal" panos, which are comprised of 9 frames.  "180" panos are 21 frames.

DJI Media Maker will stitch the 9 frames of a Horizontal pano, but then stretch it to 6119x2845 pixels.

I want to avoid that.  I guess I can un-stretch it to 16:9 in Photoshop...
