Im wanting to know if its possible to tilt the camera down a bit when starting a 180 degree pano? it seems to start at the "level" position every time. Any help would be appreciated.

We should be able to make our own custom pano like we can w/ the Ronin-S.  Where we point, the drone is the bottom left, then the top right is the top right.  We select how much overlap and let it do its thing.

No its not.  It always centres (which is normally the last place you want the horizon).  Just take a pano manually then you can do what you want.
