I take my M.A. on my bicycle rides on a soft "camera" backpack.
There are several layers of absorption: Bicycle suspension, my body (where backpack is attached to), and finally the soft backpack.
Do I need to use the gimbal protection?
Remove and reinsert the protection every time I take the M.A. includes a dalay in overal process. And riding with other fellows, I do nedd to be fast to not delay the group.

I would always use gimbal protector, it takes little time to remove and replace, your gimbal and camera are the most expensive parts of your drone.
Mavic Air has the best gimbal cover of all the Mavics use it .
