Due to strong acceleration at startup, the gimbal of the DJI Pocket turns diagonally.
1:00 - 1:30
How can this be prevented? Or center gimbal during recording?

The same thing happens during landing, the g-forces cause the gimbal electonics to change the horizon.  I don't think there's anything you can do about it.

The gimbal can be re-centered by pressing the "black button" twice.
But I don't know whether it'll help since the g-force is continuous...

The G-force will cause the gimbal to tilt, nothing you can do about it. The tilt happen on all my takeoff and landing vids.

I filmed a flight a week ago with GoPro Hero 7 Black, no tilt, just perfect footage.............oh.....and it doesnt focus hunt either.

The OP just doesn't seem to be setup for any hard acceleration. I think it could be - as DJI clearly knows how it's drones accelerate and the drone gimbals are mostly fine, but it's not in the OP's functions right now. Maybe they'll make an "action" setting and a "walking" setting at some point, but who knows?

That is because the drone has an IMU to calculate the compensation needed for inertia. You can't pack everything into the OP and still have it compact.
