How can I avoid the 'hunting' of the gimbal when turning corners?    This video is not mine but it demonstrates what I dislike about the way the gimbal behaves.

Note the way the camera doesn't follow the corner smoothly but 'hunts' in sections as the corner is negotiated.  It happens every time the photographer changes direction.

Is there a particular gimbal setting that avoids this?

It appears to me to be the operator, not the camera.

You can manually tap to focus this should help also turning on fast mode or just generally moving slowly cinematically around the corner .
