What's the best video techique to pivot and turn smoothly as the train (or other object) passes underneath you? My second or third attempt and it's clumsy and jerky...how do the pro's do this smoothly and elegantly?

Adjust your gimbal settings as well as yaw settings.
You can google Smooth Gimbal settings and there are plenty of videos about it

Nice video!
I tend to avoid the pan and cut it out in post. (so you end up with 2 shots that you can transition)
Never get these to work flawlessly.

Although a moving train is something different still.

Yes, a moving train is more difficult. A little secret: you can try to use Spotlight on Active Track

We have a nice train track right by the river here, I have some great smooth pans from a few trains I'll upload in a bit. But yes more hours on the sticks, even try sticking extenders on your sticks.
Active track is OK but you can get smoother with good ole finger work Also a higher altitude would have helped keep the train in frame when you panned through.

Or try keeping the drone stationary and just pan the gimbal using your finger on the display. You can be quite accurate/smooth.

So far I never tried that.
They move quick and I am afraid to miss anything.
Usually the places where I film don't have too many trains passing by so I would rather not miss any.
But....
I should be able to practice on cars etc.
We have a lot of those around here on the highway.
