I mean fast follow-up shots like 10 fps or something but realistically we cannot do that w/ these drones.

For me the AEB option is working fine.
I, so far,  have not needed 10 images of the same situation taken in a short sequence, since timing is a little less important when you are up in the air and the subject is rather small anyway.

Is AEB worth doing over auto?

If you care about the post processing, YES it is.
I use it all the time.
Actually I seldom make normal stills, since the dynamic range in most situations is way to big for these tiny sensors.

Show your best AEB flagship image.

Here is one I like a lot.
Would not have been possible in a normal capture.
The sky is way to bright and the ground too dark for a normal exposure.

Another one.
Again, the sky would have been too bright to capture together with the ground in a normal exposure.
So AEB is the way.

The exported files of the AEB compounded.

I don't have them anymore.
For the sake of storage I remove all the source files when I'm done with them.
(unless it is a paid job, then I keep them until I know the client is satisfied)

So I only have the rendered jpegs.
But they are also HUGE
(since they are pano's)

Yeah, the rendered jpg but I assume you had to make them save to under 2MB to post here.

What did you use to HDR merge? Is there an AEB pano feature?  I've never used any of those modes on anything other than the Spark so I'm unsure but it looks like I'm going to AEB all the time.

I have bought Affinity Photo as a replacement of Photoshop.
Photoshop is way too expensive for me, and the AEB merge function of Affinity Photo is much better.
So that is my goto program when it comes to editing stills now.

Nope.
There is not.
I set the Mavic in portrait mode (not needed per sé, but that way I can get enough vertical field of view to make it in one row) and turn  the drone by hand between each AEB shot.
Make sure you get about 1/3 overlap.
After that I process each stack of 5 images in Affinity Photo.
(it has presets, so you get the same result every time)
Next I use Autopano Giga to stitch the panorama (that is discontinued, but you can still find it online if you know where to look )
If needed, I use Affinity photo to make some small adjustments on area's that need attention.

Hard work, but only that way I get what I want!

How many AEB shots do you take?  Do you take it like in 3 rows and 3 columns?

Depends on the situation.
Usually in portrait mode and 5 or 7 stacks of 5 images. (so 25 to 35 images)
But it does depend on how 'wide' I want the pano to be.

That is a matter of taste.
But if you use Affinity Photo, you can make these adjustments on the raw files.
The output is much better (less banding etc.)

What do you mean about using Affinity photo to make small adjustments?

You see, on the left there are my presets and on the right column you can make a lot of fine adjustments.
And the best part is that the AEB source files give Affinity a lot of room to work with before the image falls apart.
