I got the opportunity this past week to fly my Mavic 2 Pro at a friends house by a nursery in Salem, OR.  I am disappointed that the pictures did not turn out crisper.  I must be doing something wrong.  I had the camera set to:
f/8
1/160 sec
ISO 100
RAW format

What's the best camera settings?

It might help to show some examples, but your settings, assuming there was enough light for proper exposure at those settings, looks fine to me.

They don't look that bad to me.  The sharpness falls of at the higher F-stop values. Try to stay under F-6.3 and just raise your shutter speed to get the right exposure.

Now that I think about it, ƒ8 might be past the sweet spot for that bird's sensor size, you might want to open up the aperture a bit.

Also, and fwiw, I found the standard color profile to be unnatural on the original Mavic Pro, boosting green, so I always shoot using the True Color profile -- don't know if the same holds true for your model.

F4.5 is a bit sweeter for this lens, and I would try and up your shutter speed to 1/200 minimum.

In your camera's Style settings you can choose to capture video at differing sharpness, contrast and saturation levels. Some folks turn down sharpness for various reasons, but it doesn't sound like you are doing that.

As for aperture, try a test shot using ƒ4.5 and one at 6.3 and see which one looks sharper

Agree with previous recomendations. I don't close aperture less F4, and better to use short exposure, as drone is moving.
Closed aperture leads to difraction and blured picture.
