I understand your pain.  It depends on the wind as well.  Just keep your eye on the wind conditions (METAR)  and keep going for those shots.

What settings are you using to film this, also they are a bit short but they might just be for your demo.
This is a circular hyperlapse test I did a few weeks ago,  and its not as smooth as I'd like it but it was a windy day.

The problem is that there was no wind, it always does it even without wind
