I am flying with the DJI Mavic 2 Zoom. I am really impressed about the stability despite of high wind and snow in the air. What a great little beast!

I still a bit reluctant to fly in wind, but I'm on the coast and I really must just try it and see,

I think it handles very well. Maybe you could take it up somewhere where you can land safely again without too much hassle if the conditions are too windy.

...and I think, preferably with an onshore wind.
