I have a P3P, and have taken quite a few photos with it. looking at the images when zoomed in a bit they are very pixelated.  so I look at the image data and the resolution is 72dpi but the image size is still 4000x3000. is there any way to increase the resolution?

Are you specifically using the dpi in relation to reviewing the image or are you concerned about the outcome when printing a still image as well? Personally I am unaware of any way alternating the dpi within the image options, but I do know of from much experience that it is possible to alter dpi using photoshop.

I'm am using  if for capturing farm trials and comparing trial plots, not for printing.

You can also pull stills from 4K video for a higher resolution.

I did try that but setting the camera to 4K only seems to affect video resolution not still image resolution  

Size is one thing. Output resolution is another.
As you mentioned it, your images are 4000x3000 pixels : this is the size.
The 72dpi resolution encapsulated in the files indicates that if you print them, by default the print size will be 72 dpi, resulting in a 55" x 42" print.
Anyway, in any decent image management software, you can choose the size of your print (usually the size of the paper you use). For example if you have A4 paper and print borderless, the dpi value will be approximately 342 dpi. In the print dialog box, changin the paper size will change the dpi value accordingly.


Don't worry about this value : it is just the relation between the original file size (in pixels) and the final output (usually paper).
Grabbing stills from a video will not give you more resolution or size as it was mentioned by the DJI guy here (I don't call 96 pixels more horizontally a better resolution) !
