After looking at the video again I wonder why he always frames everything in portrait.  I've seen some nice framed shots in horizontal but I guess he  just prefers portrait.

Probably personal taste,  but the examples he shoes seem to work for me better as portrait.

No argument from me on that.  Those shots do frame better as portrait.  

I really like the idea of the Images bring Portrait like that.

Yes,  portrait shots are great,   one reason I love the Mini3 so much but you can also still do a vertical pano.
