If I fly LOS 200-300 ft away @ 400' above takeoff I will hit a cliff wall.  Can I fly @ say 300' above ground even if its 600' above takeoff?  Or an I stuck @ 400' above takeoff?

If you're referring to the FAA's guideline, it's 400 feet above ground level (AGL) -- not the takeoff point.

OK, that's what I thought but my flight log shows a Max Alt of 704 but I was just barley clearing trees...any way to get the reading out of the VPS to corroborate I'm not flying outside the guidelines?  Or will GPS coordinates do the trick?

I don't think so, unfortunately. VPS is limited and I think GPS is 2D. What do you require corroboration for? The logs alone cannot prove what altitude you were at anyway. Imagine the polar opposite situation, if you took off from a 600ft cliff. If you flew off the edge of the cliff, the logs would show you at just 6ft. In reality, you'd be 606ft AGL. The logs prove absolutely nothing on their own

I'm just paranoid and don't want to end up on a list, but yeah downhill...I can't fly level as I move downhill or I'm above the 400' limit.

Fly from the top with a max of 6000 feet on a summit, fly from below with a max 1600 feet riding up the mountain, fly safe and fly smart.
