In the DJI Go app, what do the red/orange triangles on the map and radar tell me?  Magnetic north?  Aircraft heading?  Relative to home point? Relative to N???

They represent your aircraft and your aircraft's heading, both on the map and on the radar. The front of the triangle is the "nose" or "front" of your aircraft.

Here's the Flight Icons:
Red Triangle is your drone
Green Triangle is your camera field of view
White/Blue circle is your phone/pad's location
Red/Blue is the compass, the yellow lock indicates North is up
White "Target" is the radar
White line is the Flight Path
Orange line is the shortest way to the recorded Home Point

Thanks for the response.

When in P mode, why does the pointy end of the triangle disagree with the way the copter is facing?  It flies the way it is facing, the camera records the scene in front of it and the triangle points elsewhere.

At times, when I can't see the front of the aircraft, I would like to yaw it until the pointy end is facing me and fly her home.  What should my settings be?  Does it have anything to do with the way aircraft is facing during sync up?

There are no settings to this, all the information is there for you no navigate from the map view if you want. If you are flying forward and the "pointy end of the triangle" is not facing the same way as the direction you are going then there's some kind of issue, but I don't see how that can happen.
If you lose sight of the aircraft, then just make the "pointy end" face the orange line and move the right stick forward and you'll be headed towards yourself.

Outdoors here in sunny Florida, the display on the DJI Go app on my iPad Air is very dim.
I’m not sure that the white and orange lines are shown.  
I’ve just built a nice shadow box for the iPad.  Perhaps they will now be visible.  
Maybe my tether (70 meters) is too short; or, the map display scale is too restricted.
I’ll go check shortly.  
Are there settings to display the lines?

If your radar plane icon isn't aligning properly, try recalibrating the compass in your tablet.
Google will show you howto.

I'd suggest you either need to recalibrate your compass or you are flying in one of the intelligent flight modes like course lock.

Follow up:

The shadow box helped as did expanding my 70 m circle to fill the whole screen.  I did see faint and imperfect figure eights – practice to get ready for prime time.  

Just learned how to increase the screen brightness on an iPad.  Hopefully, the Go app will allow the setting to persist while flying.  Will test, when rain stops and wind diminishes.

I do calibrate the P3P compass before each flight.  I didn't know to calibrate the iPad compass.  I'll try that too.
