I ordered a P4 through DJI but found out I can get it for sure on the 15th from Apple. I emailed them to cancel my order and the person who has responded has tried to persuade me not to cancel but I have said 3 times I want to cancel and now I'm not getting a response.

Yeah, I had to "persuade" them to cancel mine.

Anyway, it wants to upgrade my DJI Assistant to DJI Assistant 2.  Where the heck is that?

Will they be in Apple stores on the 15th ? What's shipping time (not estimated ship date) slotted at for the P4 ordered through the DJI site?

yeah they are doing it intentionally so you can learn what "patience" means....

They are in Apple stores now. Some people got it early before Apple caught the problem. I tried the other day but it wouldn't go through when Apple tried scanning it and they realized the release date was on the 15th. They put my name on the box and said they could sell it on the 15th to me. I'd wait at least a few more days but possibly longer through DJI.
