I added the Phantom 4 to my Inspire 1 and Phantom 3 so now the P3 has to find a new home. The question is: how do I delete my information so the new owner can download the DJI Go app and hit the skies?

New owner downloads the DJI Go app and logs in with their details will do the trick.

You can format the SD card so all your videos/photos are gone.
