Just looking at some photos/videos I've taken with my new Phantom 4 today and they don't seem level.  What could be causing this?

It could be an IMU or gimbal calibration issue. Or it could just be the long running saga of the 'horizon not level' problem. If it's the latter then the latest firmware updates seem to have sorted this out.

Which software builds is your setup using ? (With all setup have a look in 'about' in the 'General Settings' menu, this tells you software for RC, aircraft and DJI GO App')

i found this too the other day filming the sunrise over the water i was quite disappointed really

That image was taken with the last software update before the one that was released today (which I've just updated to).  I have reset the IMU. I'll do a Gimbal calibration before my next flight.

Can the wind cause this problem?

A good shortcut to adjusting the gimbal is holding the 'C2' button operated (the button on back of RC at right hand side) and adjust roll using the right hand wheel on RC.

That would be the best thing to address your issue, you can do this using the app or the shortcut Aardvark provided.

I thought the C2 button can only be programmed to swap between FPV and Follow modes. How can I adjust the Gimbal roll with that?

Press and hold 'C2' button, while holding it operated rotate right hand wheel on RC and you will see level change.

EDIT:- it can also be programmed to do other things than Follow or FPV.

Just tried it and pressing and holding C2 does nothing. Are you sure this is for the phantom 4?

Hold C2 operated and at the same time turn the right hand wheel on RC, assuming that RC, display and aircraft are all connected and powered up then the gimbal should tilt left or right depending on which way you turn the right hand wheel control.
