If I sell my phantom 3 do I need to reset anything back to factory defaults? Will the new buyer have to set up a new account and then the aircrafts flight logs start from fresh? Will my previous flights show up?

None of your flights will show up on another users app, they will use their own account. Your last several flight will be on the flight data recorder and you are unable to delete that.
I would just leave all the setting as they are and the new user can change them whatever they want.
