Regarding the dome cover, is it safe to fly without it ? Will it effect the gimbal when flying at high speed if not attached ?

ive seen youtube videos from these ostensibly famous "youtube influencers" that had the dome off. it looks like it would fall off in flight anyway.

Yes it's safe to fly without it, but if you crashed it I'm sure having the dome attached would give the camera/gimbal a better chance of survival.
But I'd say fly without it if you are trying to capture stunning photos/video. If your playing around low lover in Sports Mode then I'd leave it on.
There's already a bunch of videos out there and in Sports Mode the gimbal is just fine unless your making hardcore attitude deviations.

Okay thanks for clearing that up. In my over simplified world I'm going to think of it as

Working = Dome Off

Playing = Dome On

something like that, or iy may even give you good enough results for what you are doing and you want to be safe so you may leave it on.
