When switching to 1080 120p is the frame a zoomed in 1080 image with loss of detail or does it actually use more of the sensor like pinch to zoom and give a true 1080 image.

It uses the centre 1920x1080 section of the 4096x2160 image sensor chip, which leads to a much narrower field of view. It is primarily intended for slow motion playback (@30fps ?). I've not used it other than a quick test. Because of the speed the ISO tends to be high, and with a slowest shutter of 1/60th Sec'. Lots of light needed otherwise a bit noisy.
At the slower frame rates it would appear to use 2x2 binning of the whole chip (bunching together the pixels to turn a 3840x2160 matrix into a 1920x1080 matrix) which would improve the light gathering capabilities (like having bigger pixels).

Thanks for the info had a quick play with settings but not actually done a recording in 120p to compare and only seen the image on the tablet. I was therefore curious as to any possible image degredation due to the zoomed in image.
