You can't. You have to set up the camera on the ground and initiate record prior to take off. The only thing you can control from the ground is the gimbal tilt.

In the same vein, I've just started using the GoPro 3 with my Pv2. Since I'm connecting the cable to the camera from the quad, is it maintaining the battery on the camera or must one remove the camera and manually charge after a few flights?

Huge pain to unmount the stupid thing.

You won't have to unmount the gopro to charge it's battey. Just plug the mini USB cable into the camera (while connected to your gimbal/phantom), the other end into your computer - It will then charge. I would advise to have the gopro fully charged to prevent it from using power from the phantom, this will decrease your flight time.
